Terroir

Kakheti is often described as one region. In reality, it is a landscape of shifting soils, elevations, and exposures that can change within a single vineyard.

At Gilauri, we are terroir hunters. The work begins with identifying sites and parcels that show distinct structure, balance, and character on their own.

These differences are preserved through separate harvests, fermentations, and blending decisions so each site can retain its distinct character.

Rows of green Saperavi vines flourish in a neatly organized vineyard, stretching across Kakheti’s scenic landscape with a line of trees and a clear sky in the background.

A person wearing gloves works on wine barrels inside a workshop, seen through a window with a wooden door and ventilation fan in the background, capturing a glimpse of traditional craftsmanship in Georgia.
A metallic oval door with a locking wheel is set in a dark surface, with a round pressure gauge positioned above it—reminiscent of the kind found in Saperavi wine cellars.

Culture

Wine in Georgia is tied to identity, continuity, and survival across centuries of invasion and political pressure.

Mountains, towers, and vineyards remain enduring symbols of that history, carried forward through the people, landscape, and wines of Kakheti.

Gilauri redefines Georgian Saperavi, positioning it to compete with the world’s great collector-worthy red wines.
