Kakheti is often described as one region. In reality, it is a landscape of shifting soils, elevations, and exposures that can change within a single vineyard.
At Gilauri, we are terroir hunters. The work begins with identifying sites and parcels that show distinct structure, balance, and character on their own.
These differences are preserved through separate harvests, fermentations, and blending decisions so each site can retain its distinct character.
Wines
Each wine is assembled from parcels with different characteristics and roles.
Sites with volcanic and alluvial soils bring structure and depth. Limestone parcels contribute freshness and precision. The final balance is set through blending, while preserving the character of each site.
The aim is to make wines where the vineyard remains visible in the glass and that belong in every serious cellar.
